Disco Delight - A shimmery take on The Classic Bellini

I'm Jamie, and today I'm sharing a delightful recipe that's close to my heart: peach puree. When peaches are in their prime, this recipe is an absolute treat. It's refreshingly light, not overly sweet, and incredibly versatile. Maybe you've savored this during an exclusive stay at The Palace at Osowa Sien or perhaps you're planning a self-catered soirée. Either way, this peach puree is the magic behind our 'Disco Delight' – a sparkling spin on the classic Bellini, with a touch of edible glitter. Dive in, and let's get blending!

Peach Puree Recipe:

  1. Select Your Peaches: Opt for 5-7 ripe peaches (around 750 g). The riper, the better for a naturally sweet and aromatic puree.

  2. Preparation: As your pot of water heats to a boil, set aside a bowl filled with ice water.

  3. Easy Peeling: Make a tiny "X" incision at each peach's base. This aids in effortless peeling later on.

  4. Blanching: Submerge the peaches in boiling water for 30 seconds to a minute. Ensure the pot isn't overcrowded; blanch in batches if necessary.

  5. Cooling: Swiftly transfer the peaches to the ice water.

  6. Peeling and Pitting: Once cooled, peel starting from the "X" and discard the pits.

  7. Blending: Toss the peach flesh into a blender, adding the juice of one lime, honey (approximately 180 g, or 25% of the peach weight), and a pinch of salt.

  8. Taste Test: Blend to a smooth consistency. Adjust to taste, adding more lime for zing or honey for sweetness.

For a Disco Boho event, the 'Disco Delight' drink isn't complete without its signature shimmer. Here's a tip: instead of mixing edible glitter directly into the puree, which might diminish its sparkle, try this:

  1. Sprinkle a pinch of edible glitter at the base of each champagne flute.

  2. Pour in the peach puree, followed by champagne.

  3. The champagne's bubbles will dance with the glitter, creating a mesmerizing, magical swirl.
